Cranberry Gin Cocktail
Makes about 8 servings
For a festive presentation, sugar the rims of your glasses by rubbing them with a slice of lemon and dipping in superfine sugar. Be sure to make the cranberry simple syrup for this cocktail ahead of time so it can chill.
Ingredients:
- 8 ounces gin
- 4 ounces Cranberry Simple Syrup (recipe follows)
- 4 ounces fresh lemon juice
- 1 (750 ml) bottle sparkling wine, chilled
- Cranberry Simple Syrup:
- 1 cup granulated sugar
- 1 cup cranberry juice
Directions:
- Make cranberry syrup: In a small saucepan, combine sugar and cranberry juice. Bring to boil over medium heat, stirring to dissolve sugar. Transfer to a sealed jar and refrigerate until cold.
- In a large pitcher, combine gin, cranberry syrup, and lemon juice. Chill until cold.
- Just before serving, stir cocktail mixture. Carefully add sparkling wine.
- Pour into elegant glasses and serve.
