Protein Powder Peanut Sauce
Makes about 1 cup
This zippy sauce boasts a boost of protein! Try it with fresh spring rolls, satay skewers, and noodle bowls.
Ingredients:
- 1/2 cup peanut butter
- 2 tablespoons protein powder (like Sprout Living Simple Pumpkin Seed Protein Powder)
- 1 tablespoon honey
- 3 tablespoons fresh lime juice or unseasoned rice vinegar
- 1 teaspoon grated lime zest
- 1 tablespoon soy sauce
- 2 teaspoons grated, peeled fresh ginger root
- 1 teaspoon minced garlic
- 1/2 teaspoon crushed red pepper flakes
- OPTIONAL:
- Chopped peanuts
Directions:
- In bowl of food processor, combine all ingredients with 1/2 cup water. Whirl until smooth, stopping to scrape down side of bowl once or twice.
- Taste and adjust to preference. Add more water as needed to reach desired consistency.
- Spoon into a container, cover, and chill until ready to eat. Garnish with chopped peanuts just before serving.
